A thermistor or an oven sensor is a resistor that changes with temperature, and GE publishes the resistance it should read at a given temperature. That makes this one of the few things on an appliance that can be proved rather than inferred: measure it, compare it with the table, and the answer is not a matter of opinion. It matters because a drifting sensor imitates a failed control board, and the board costs several times the part. On ovens, calibration is tried before anything is replaced.
